It’s exhibition time again for M&P Engineering!  We are really excited to be exhibiting at the Potato Expo at the Moscone West Convention Center  in San Francisco, California.  The Potato Expo is the largest conference and tradeshow for the potato industry held in North America.  Come and visit us on Stand 846, Pamela Nugent  Managing Director will be on the stand to discuss the Large Onion Peeler.  After the exhibition we will be arranging live demonstrations of the large onion peeling machine at a site in California.  Please email info@mp-engineering.co.uk if you would like to arrange an appointment.

M&P has been manufacturing onion peelers since the 1960’s supplying over 400 worldwide. It is a proven design and does not require specialist knowledge to service and maintain.
The M&P Onion Peeling Machine can handle a wide range and quality of onions.  The machine uses a unique method which does not hold the onion during peeling and uses self-adjusting floating top and tail knife assemblies and adjustable slitting knives to determine how much skin is removed. Another key benefit of the onion peeling machine is the low labour requirement.  The number of operators required is a minimum of two if the onions are fed automatically, one person to orientate the onions and one person to inspect and trim the onions – this results in great ‘cost of labour’ savings for the manufacturer.
The capacity for the large machine is 45mm to 115mm diameter and 18mm to 50mm diameter for the small peeler.  M&P’s large machine can process up to 750kg of onions per hour.

12 Surprising Non-Eating Uses for Onions

Onions are loved in almost every cuisine across the globe. They also have wonderful health benefits, including lowering cholesterol, rich in antioxidants and supposed links to cancer prevention.

In this blog, we are going to tell you about 12 surprising benefits of onions that you may not have known.

 

In the Home

  1. Clean your BBQ

Cut an onion in half and stick a fork on the top of the round outer edge, light your BBQ and run the onion across the grills and scrub it clean.

  1. Polish Metal

Slice and crush an onion and immerse in water. Take a cloth into the solution and rub the metal surface until clean. Onions will even remove rust.

  1. Get Rid of Paint Smell

Making a bowl of crushed onions in water will help eliminate nasty paint and varnish odours in a room.

Boil onion skins in a tied-up pair of tights for about 20 mins, and you have an easy homemade dye.

Blend together onion, garlic, cayenne pepper and add water. This clever solution can be sprayed onto your flowers and plants and will keep the flies off.

By adding a red onion in a plastic airtight container with your avocados will stop them ripening too quickly. This also works great with cut avocado, add some red onion slices on top to keep the avocados from browning.

The Pickled Onion Revolution and the Science behind it

2016 seems to have been the year of the ‘picked onion revolution’. These pickled treats along with their pickled counterparts seem to be popping up everywhere, coming out of retirement and finding themselves in fancy restaurants, pop up food vans to our own kitchen tables.

Pickling began in India 4000 years ago to preserve out of season vegetables, they started by pickling the cucumber. Despite the original intention to preserve the vegetable, pickles are loved because of the distinct flavour, and even have improved nutritional values with vitamins produced during the process.

Pickled onions in the United Kingdom have always been traditionally loved alongside a famous portion of fish and chips and part of a ploughman’s lunch. Silverskin onions are enjoyed in a Martini Cocktail called the Gibson.

Pickled onions are generally pickled in vinegar, and usually use small Silverskin onions, but often larger Spanish Onions are used and are sliced before pickling.

So, where did this new re found love for the humble onion in its pickled form come from? Let’s start by understanding the science behind pickling.

How does an onion become a pickle?

Pickling preserves the vegetable, extending its lifespan in 2 methods: anaerobic fermentation in brine or immersion in vinegar.

Onions, like all vegetables are covered in bacteria, which is mostly lactobacillus. During the pickling process, the idea is to grow these bacteria, whilst supressing the growth of bad bacteria that causes disease and spoilage. This is done by first metabolising the sugar in the onion, so therefore the bacteria has none to grow on, whilst also producing lactic acid, carbon dioxide and alcohol and leaving the plants nutritional substances remaining. The lactic acid preserves the onion or vegetable, and gives it their characteristic tartness. The ‘good bacteria’ also increase the amount of vitamin B and give the onion its taste.

Pickling Tips

  • The essential ingredient in pickling is the vinegar, its acetic acid being the vital component to break down the microbes. Pickling vinegar should be at least 5% acidity.
  • If you are pickling in a brine, do not use table salt, as they contain anti-caking agents that will cloud up the liquid. Use sea salt, kosher salt or pickling salt.
  • You can pickle any vegetable and can even add spices, herbs, garlic or chillies. The only vegetables that do not pickle well are thin delicate leaves such as spinach and lettuce; but crisp leaf vegetables such as cabbage ferment very well.
  • The vegetable can be cooked before pickling, but don’t overcook them.

So, to answer the question, as why pickles have become so fashionable again – Amy Bryant for The Telegraph comments “Pickling is hot right now. Jars of cucumber and dill, blushing pink radishes and rainbow layers of carrots and beets… Preserving is a sexy business.” With people becoming ever so health conscious and weight conscious, pickles provide a low-calorie snack, full of friendly bacteria, placing them in the ever-so sought after ‘super food’ category. The distinct, strong taste of pickles creates a flavoursome kick to accompany dishes, which is why they are popping up in gastro restaurants and fancy eateries worldwide.

Pickled Onions are served in many different cultures across the globe, from North America, South America, Asia and Europe. With this popularity, pickled onions are of course produced to a commercial level across the world. Sold in jars in supermarkets, used in restaurants and endless commercial avenues. Onions need to have their thick outer skin, roots and tops removed before they can be effectively pickled.  Onions are notoriously laborious to peel by hand and even on a commercial level, many onion peeling machines do not do a great job.
