Christmas is just around the corner and people are already in the holiday mood. All over the world, different countries have different Christmas traditions, as well as different dishes that are considered ‘Christmas dinner’.

In Portugal it’s common to have a very meaty dish or alternatively a cod dish. In Italy, pasta is the go-to. In Germany, sausage and mash is the traditional meal on Christmas day.

In the UK, we have our ever so loved oven-roasted turkey, brussel sprouts, roast potatoes, stuffing, roast parsnips, and cranberry sauce. And even with vegetarianism becoming more and more popular in the last few years, there are also vegetarian versions of this famous meal to accommodate all tastes.

This year, why not try stuffed onions as a side dish? There are lots of variations you can try, but today we will share one of our favourites:

  • 10 medium onions
  • 2tbsp oil
  • 8 rashes of bacon
  • 450g breadcrumbs
  • 2 large eggs
  • 250g butter
  • Herbs of choice

In a large pan, boil the onion until soft. After draining, cut a slice off the top. Remove some of the inside to make space for the filling and chop the insides you have taken out into small pieces. Heat the oil in a pan and fry the chopped bits of onion and the chopped bacon until soft and golden. Transfer into a bowl and stir in the breadcrumbs. Blend the eggs, melted butter and the herbs in a blender to create a paste and add this into the breadcrumb mixture. Spoon the filling into the onions and bake in the oven for around 30 minutes at 180 degrees.
