Ingredients you’ll need (this recipe serves 6):
- 400g black beans
- 2 handfuls baby spinach
- 500g tomatoes
- Half a cucumber
- 1 mango
- 1 large red onion
- 8 radishes
- 2 avocados
- 100g feta cheese
Preparation: scatter the beans and spinach over a large container. Arrange the tomatoes, cucumber, mango, onion, and radishes on top and mix. Top the salad with the avocados and feta and serve with any dressing of your choice. It couldn’t be simpler and any more delicious!
