Christmas is fast approaching, and some recipes will need to be prepared ahead of time. For a stress-free December, and for convenience, why not start getting ready now?

Today we’ll share with you a recipe for an easy and delicious cranberry and onion chutney. Let’s make the most out of one of the world’s most popular ingredients, the versatile onion, and a seasonal one, cranberries. This recipe does need to be prepared ahead of time if you’re planning to have it during Christmas, as once done it needs to be stored in a cool dry place for at least a month for maturing.

Here’s what you will need:

  • 700g sugar
  • 900g cranberries
  • 2 red onions, finely chopped
  • 2 cinnamon sticks
  • Half tsp ground all spice
  • Zest and juice of 4 large oranges
  • 50ml red wine vinegar

Start by making a sugar syrup by heating half of the sugar in a pan until dissolved, let it bubble for about 5 minutes until l thick. Transfer into a large saucepan and keep for later.

Add the rest of the ingredients into a pan and bring to the boil. After it’s boiling, reduce the heat and let simmer for about 2 hours. It should be thick enough that you can draw a wooden spoon across and leave a trail that doesn’t fill up with vinegar, but not too thick as it will keep thickening as it cools down. Once it’s done, discard the spices and move the chutney into jars.

This chutney is delicious to have with a cheese board, and with a nicely decorated jar it can work as a great gift too.
